INGREDIENTS
- 1/3 cup (30g) dutch-processed cocoa powder
- 1 1/4 cup (148g) all purpose flour
- 1/2 cup (100g) granulated sugar
- 1/2 tsp (2g) baking soda
- 1 tsp (4g) baking powder
- 1/2 tsp (2g) sea salt
- 2 tbsp (36g) maple syrup, dark amber
- 1/4 cup (48g) neutral flavored oil
- 1 tsp (5g) apple cider vinegar
- 1 cup (240g) plant milk
- 1/2 tsp (2g) chocolate extract, optional
- 1 1/2 tsp (6g) vanilla extract
METHOD
- Preheat the oven to 350 0F with a rack positioned in the center.
- Prepare a 8" round baking pan. Spray the pan with oil, then place the parchment paper on the bottom. Do not smear the parchment. Set aside.
- In a large mixing bowl add flour, sugar, cocoa powder, baking powder, baking soda, and sea salt. mix together until merged and inflate.
- In the second mixing bowl add oil, maple syrup, vegetable milk, vanilla extract, chocolate extract (if using), and apple cider vinegar. Shake together until emulsified.
- When the oven has been heated before, add the wet ingredients into the dry and use a mix of cochops until smooth and free to bump.
- Pour the dough into the prepared baking pan and tap the wok on the table 2-3 times to release some air bubbles. Place a wok in the middle of the oven and bake for 32-34 minutes. Once done, the testers will come out clean or with some crumbs and the edges of the cake will withdraw from the edges of the pot. Do not open the oven while the cake is baked or the middle will collapse.
- Place a frying pan over the wire rack and let it cool for 5 minutes. Run the knife around the edges of the cake pan if necessary, then place the wire shelves over the baking pan and upside down to release. Peel the parchment paper from the bottom of the cake and invert it once again to cool it down to the wire shelf. Let it really cool.
- Move the already cold cake to the cardboard round and wrap the meeting with plastic wrap. Keep this in the fridge until cool. Frost cakes while cold. Note: For longer storage cover a plastic cake wrapped in foil or place it in a ziplock bag and put it in the freezer. Exhaust the ice in the refrigerator.
