INGREDIENTS
Soft Lemon & Blueberry Explosion Cookies
  • 1 Cup Sugar
  • 1/2 Cup Butter Softened
  • 1/3 Cup Almond Milk You Can use Regular Milk As well
  • 1 Tsp Vanilla Extract
  • 2 Egg
  • 1/2 Tsp Salt
  • 4 Tsp Baking Powder
  • 1 1/2 to 2 Cups Blueberries Fresh
  • Juice of Half a Lemon
  • Optional : 1 Tbsp Lemon Zest

Lemon Icing Glaze
  • 2 cups powdered sugar
  • 1 Tbsp almond milk or milk
  • 3 Tbsp lemon juice 1 ½ lemons

INSTRUCTIONS
Soft Lemon & Blueberry Explosion Cookies:
  1. In a bowl, sift along flour, baking powder, and salt, set aside.
  2. In another bowl, employing a mixer, cream along butter and sugar till lightweight and downlike. Add in  lemon juice, milk, eggs, vanilla, almond milk and lemon zect optional and continue combining till combined.
  3. Add 1/2 of the dry mixture to the wet mixture and blend. Add remainder of the flour and blend along till combined.
  4. Fold in blueberries to distribute.
  5. Using a medium size cookie scoop, drop scooped cookies out on parchment paper lined baking sheet and bake concerning 8-10 minutes @ 350 degrees, or till cookies don't sink or imprint once gently touched on prime. don't over-bake. Cookies mustn't be brown.

Lemon Icing Glaze :
  1. In a shallow bowl, combine powdered sugar and lemon juice in a bowl. Add in milk and continue stirring till mixed well and it is a nice thick consistency, nonetheless pourable.
  2. Dip cooled cookies in icing and permit to line on a cookie rack
  3. After icing has set, seal cookies for keep soft.

Notes
  • Glazed cookies can fresh at room temperature for two days or in the refrigerator for up to 1 week
