INGREDIENTS
- 1 tablespoon Olive oil
- 220 g Tender Stem Broccoli or normal broccoli, trimmed and chopped into large chunks
- 150 g Petit Pois frozen peas
- 125 g Norwegian Smoked Salmon chopped into strips (or fresh salmon if you prefer)
- 6 medium free range Eggs, beaten
- Salt and pepper.
INSTRUCTIONS
- Heat the oil in a frying pan.
- Add the broccoli and fry for 5 minutes until softened.
- Add the peas and fry for a further 3 or 4 minutes until warmed through.
