INGREDIENTS
- 1 egg
- 400g of potato, grated
- 1/2 tsp of salt
- pinch of black pepper
- 120g (4oz) cheddar, grated - 4 HEa's
- Spray oil
- 300g of broccoli, grated
INTRUCTIONS
- Preheat the oven to 200c/400f (gas mark 6)
- Strengthen excess fluid from grated potatoes.
- Add to the bowl with eggs, salt, pepper, and grated broccoli.
- Stir until well blended
- Stir the grated cheddar until well blended.
- Add the same amount to the 12 holes of the muffin tray.
- Push the mixture down tightly into each hole (it will help them form together)
- Spray on it with a little oil spray
- Bake in the oven for 40 minutes until a bit golden.
- Let it somewhat cooler before releasing from the muffin tray.
