How To Make Syn Free Broccoli Cheddar Hash Brown Muffins

SYN FREE BROCCOLI CHEDDAR HASH BROWN MUFFINS

This recipe is gluten free, vegetarian, Slimming World and Weight Watchers friendly

INGREDIENTS
  • 1 egg
  • 400g of potato, grated
  • 1/2 tsp of salt
  • pinch of black pepper
  • 120g (4oz) cheddar, grated - 4 HEa's
  • Spray oil
  • 300g of broccoli, grated

INTRUCTIONS
  1. Preheat the oven to 200c/400f (gas mark 6)
  2. Strengthen excess fluid from grated potatoes.
  3. Add to the bowl with eggs, salt, pepper, and grated broccoli.
  4. Stir until well blended
  5. Stir the grated cheddar until well blended.
  6. Add the same amount to the 12 holes of the muffin tray.
  7. Push the mixture down tightly into each hole (it will help them form together)
  8. Spray on it with a little oil spray
  9. Bake in the oven for 40 minutes until a bit golden.
  10. Let it somewhat cooler before releasing from the muffin tray.
